TORTA D’AVENA (OATMEAL CAKE)
Preparation time: 20 minutes Baking time: 12-15 minutes Servings: 7-8
INGREDIENTS
270 g (2 1/2 cups) oatmeal flakes
90 g (½ cup) raisins or dried cranberries
90 g (½ cup) almonds or hazelnuts, coarsely chopped
3 large ripe and mashed bananas (about 1 ½ cups)
1-2 apples, peeled and finely sliced
3/4 cup (180 ml) tablespoons almond or hazelnut milk
½-1 teaspoon cinnamon (adjust cinnamon to taste)
DIRECTIONS
1. Preheat the oven to 180°C (350°F)
2. In a medium bowl mix together the oatmeal, raisins, almonds and cinnamon
3. Add the milk and mix well. Let it rest for a few minutes so the oatmeal can soak up the milk, then add the bananas and apple. Pour in to 22X18 cm (9×7 inch) oiled or non-stick baking pan
4. Bake for 12-15 minutes until lightly brown on top. Serve either warm or at room temperature. – Paola

I made this last night and loved this for breakfast this morning! Gluten-free and full of healthy fruits, nuts and grains. My 5-year old didn’t like it, however, so I’ll make it for me and continue the search for a healthy breakfast option for him.

Glad you loved it.It is one of my favorite ones for breakfast. My kids don’t like it as well. They love yogurt with muesli for breakfast. Maybe you should try muslei for kids.
