Pantesca salad: this is a delicious salad that recalls the island of Pantelleria (Sicily) from which originates.
I love it for a summer meal. If you are in Pantellaria try the local one, it is super tasty!
Mackerel (called in Italian “pesce azzurro”) is common in the Mediterranean sea and highly nutritious. It is rich in omega-3 fatty acids, protein and minerals. It is belongs to my book – Honestly Healthy – Salad and Smoothies for every day meal.
PANTESCA SALAD
Total preparation time: 35 minutes Cooking time: 15 minutes Servings: 4
INGREDIENTS
420 g (15 oz) mackerel fillet, preserved in olive oil
4 medium potatoes
200 g (7 oz) cherry tomatoes, cut into pieces
16 black olives, pitted and cut in half lengthwise
100 g (3.5 oz) capers (preserved in salt and washed several times in water)
1 medium red onion, finely sliced
Dried oregano
2 tablespoons extra virgin olive oil
Sea salt and freshly ground pepper
DIRECTIONS
1. Cook potatoes in a pressure cooker for about 6-8 minutes. They should be tender but not crumbly. Let cool for a few minutes. Peel and cut into pieces
2. In a large bowl mix gently potatoes, tomatoes, olives, capers, onion and dried oregano. Add mackerel and flavor with olive oil, salt and pepper. Serve immediately. – Paola
