This simple and vibrant kale salad with apples and raisins will become your go-to! It is tangy, tart, sweet, and full of flavor.
If you have not tried kale yet, now may be the time. Kale is super nutritious and delicious, making it a super salad green. Kale is a highly nutritional vegetable, rich in fiber, calcium, potassium, antioxidants and folic acid (if consumed raw).
The most tender kale is the one harvested in late autumn and early winter after the first frosts. It is one of my favorite winter salads. You can enjoy it as a main dish (larger portion) or side dish to accompanied roast turkey and beef. Something to serve on your Christmas meal.

INSALATA DI CAVOLO NERO, UVETTA E MELE (KALE, RAISINS AND APPLES SALAD)
Preparation time: 10 minutes Servings: 4
INGREDIENTS
200 g (7 oz) kale
4-5 tablespoons raisins
3 organic red apples, washed, dried and cut into pieces
4 tablespoons sesame seeds, lightly toasted
Dressing
150 g (about 5 oz) plain Greek yogurt
1 tablespoon honey
1 tablespoon olive oil
2 tablespoon fresh squeezed lemon juice + some zest
DIRECTIONS
1. Wash kale, remove center ribs and stems, cut leaves crosswise into large strips.
2. In a small bowl prepare dressing by mixing yogurt, honey, olive oil, lemon juice and zest.
3. In a large bowl mix kale, raisins and apples.
4. Divide into four bowls and pour dressing over. Sprinkle sesame seeds on top. Toss gently to mix flavors. You can serve immediately or refrigerate for 1 hour. – Paola

Sounds lovely, Paola. And super healthy, too. I’m not generally speaking a big fan of kale, but I make an exception for cavolo nero, which is so much tenderer than other kinds, especially as you point out this time of year.
